SPRING: WOOD ELEMENT
Wake up, sleepy taste buds! It’s time to refresh and grow like a vine in the sun! Take a deep breath of that crisp spring air and soak in all the vibrant life around you. The warming soil is like a gentle nudge out of hibernation, urging us to rise and shine! In the world of the 5 Elements, Spring is all about the Wood Element, beckoning us to stretch our branches and reach for that glorious sunshine! The wood element is also about sour. So, let nature be your guide as you embrace new beginnings with a bubbly sip of Cooper Mountain Tocai Friulano, paired perfectly with the scrumptious recipe that follows!
Sheet-Pan Chicken with Asparagus & Lemon Tahini Dressing
Ingredients
4 bone-in, skin-on chicken thighs
1 bunch asparagus, trimmed
1 onion, cut into wedges
1 lemon, sliced thin
2 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
¼ cup tahini
1 garlic clove, minced
Pat the chicken dry and place on the sheet pan. Drizzle with 1 tbsp olive oil, then sprinkle with paprika, garlic powder, salt, pepper, and a little chili flakes if using. Toss to coat. Toss asparagus and red onion with remaining 1 tbsp olive oil, salt, and pepper. Add them to the sheet pan along with lemon slices. Roast everything together for another 15–20 minutes, until the chicken reaches 165°F and the vegetables are tender and caramelized.
Make the tahini dressing:
In a small bowl, whisk together tahini, garlic, lemon juice, olive oil, and a pinch of salt. Slowly whisk in warm water until it’s pourable but still creamy.
Serve:
Plate the chicken with asparagus and onion, then drizzle generously with tahini dressing. Garnish with fresh herbs (like parsley or dill) if you’d like.
